Another bright, sunny day and this beautiful morning light, so uplifting ☀️
Yesterday we were told the lockdown will last for at least one more month, only the smallest kids are allowed to go back to school part-time.
That must be really terrible from the point of view of small business owners… I know how much work stands behind running your own business and now everything is at risk. Please, support your local businesses if you can so they don’t have to close 🙏 And if any of you thinks I could be helpful in some way, just dm me.
On the picture you can see my overnight oats from this morning. I’m not feeling very inspired when it comes to cooking these days so I prepared this easy recipe the evening before and enjoyed it topped with extra peanut butter, raspberries and chocolate chips. I’ll leave the recipe below 😉

Peanut butter overnight oats
60g (about 1/2 cup) rolled oats
1 tsp chia seeds
1 tsp peanut butter
1 medjool date, chopped (sub 2 tsp maple syrup)
pinch of salt
180ml (3/4 cup) plant milk, almond, oat, soy or coconut will work great
In the evening, mix all ingredients in a bowl or jar. Refrigerate overnight. Serve in the morning with your favorite toppings. .
