Banana choc chip blondies 🍌🍫
First thing I baked after returning from the holidays and being reunited with my kitchen 😄
I had some overripe bananas to use, but I wasn’t feeling like baking a banana bread this time – it somehow reminds me of the long period of isolation and I need a break from it now 😂 Anyone else feeling that way too?
Well, my blondies turned out rich, moist and yummy, so no regrets! And I can tell you they taste amazing with a drizzle of peanut butter too! 🥜
Here’s the recipe in case you want to give them a try ⬇️

Banana choc chip blondies
▪️1 large overripe banana (130g weight without skin)
▪️1/2 cup of unsweetened plant milk
▪️4 tbsp liquid coconut oil
▪️1/3 cup (about 50g) of coconut sugar
▪️1 tsp of vanilla extract
▪️1 tbsp apple cider vinegar (can be skipped if you don’t have it, but I like that extra fluffiness it gives)
▪️150g (1 and 1/2 cup) of oat flour
▪️1/2 tsp baking powder
▪️1/2 tsp baking soda
▪️1/4 tsp of sea salt
▪️1/3 to 1/2 cup of dark chocolate chips (depending on your liking)
Add banana to a large mixing bowl and mash it with a fork. Add plant milk, oil, coconut sugar, vanilla and apple cider vinegar. Whisk to combine. Add oat flour, baking powder, baking soda and salt. Mix to combine. Mix in chocolate chips. Transfer to a lined and lightly greased 8″ (20cm) square brownie pan. Bake at 180C for 25 minutes. Let cool on a cooling rack before slicing.
