Blueberry quinoa overnight oats 💜 I love this twist so much! Quinoa has such a great consistency, it’s healthy, light and nourishing. Prepared as overnight oats it makes a lovely, refreshing breakfast. It’s definitely becoming a new staple in my house in the next weeks!
The recipe is below, as usual ⬇️ Hope you are enjoying this beautiful summer weather ☀️

Blueberry quinoa overnight oats
1/2 cup cooked quinoa
2 tbsp oats
1 tbsp chia seeds
A handful of frozen blueberries
2 tsp of sweetener of choice (syrup or honey)
Pinch of vanilla (optional)
Tiny pinch of salt
1/2 cup plant milk
Mix all ingredients in a bowl or a jar and let sit overnight. Serve in the morning with toppings of choice, for example yogurt blueberries and puffed quinoa.
