Chocolate pudding oatmeal cake 😊🍫🍰
An easy overnight breakfast, creamy and satisfying, served with all my favorite toppings 😊
I simply cooked porridge oats in the evening, this time adding a little bit of starch, to create that pudding texture. I transferred it to a bowl and let it sit in the fridge overnight. In the morning you just need to flip the bowl over a plate and your breakfast is ready 😊
Flavour combination are endless, I felt like chocolate and vanilla, topped with yoghurt, peanut butter and red fruits 🍓

Chocolate pudding oatmeal cake
To a saucepan, add 50g (1/2 cup) of porridge oats, 2 tsp tapioca or corn starch, 1 tbsp cacao powder, 1 tbsp maple syrup, pinch of sea salt, 1 tsp of vanilla, cinnamon to taste, 1 cup of almond milk and 1/2 cup of water. Bring to a simmer and cook until thick and creamy, stirring frequently. Transfer to a bowl (I recommend dumping the bowl with a little bit of cold water), even the surface with a spoon and place in the fridge overnight. In the morning gently pass a knife around the edges and flip the bowl over a plate. Decorate with your favorite toppings and enjoy!
