Easy banana buckwheat pancakes 🥞🍌
One bowl, 5 ingredients, 10 minutes. Naturally sweet and gluten free.
It’s the third time I’m making them this week and I thought to finally share the recipe, also because it’s 🥞

Easy banana buckwheat pancakes
1 ripe small/medium banana (about 90-100g without skin)
120ml (1/2 cup) of almond milk
1 tbsp of olive or coconut oil
75g (1/2 cup) of buckwheat flour
1/2 tsp of baking powder
In a mixing bowl, mash the banana with a fork. Add almond milk and oil and whisk with the same fork to combine. Add buckwheat flour and baking powder, mix until well combined. Heat a non-stick skillet until very hot and grease it lightly with oil. Bake 6 pancakes, over medium heat, until golden brown on both sides.
