Festive baking mood is totally on at my place 😊🎄
Today I baked healthy crunchy fingerprint cookies filled with cashew butter caramel and chia jam. I wanted to go a little extra so I finished them off with pecan nuts and dark chocolate drizzle 😉🍫🍪
I love making my cookies wholesome and nutritious, so I can have them for breakfast, as my post yoga snack or any other time of the day.

Healthy fingerprint cookies
(makes 9 cookies)
1/2 cup (50g) of rolled oats
1 cup (100g) of almond flour
pinch of salt
3 tbsp of smooth and runny nut butter (almond, peanut, cashew…)
3 tbsp of maple syrup
3 tbsp of almond milk
1/2 tsp of vanilla extract
Add rolled oats to a food processor and blitz into flour. Add almond flour and salt and blitz to combine. Add all remaining ingredients and pulse blend until you have sticky cookie batter (play dough consistency). Divide in 9 parts, roll into balls. Flatten each ball into disc shape on a baking tray lined with baking paper. Use the back of a measuring teaspoon (or finger) to create well in each cookie. Bake for 10 minutes at 175C. Cool on a cooling rack.
Filled cooled cookies with cashew caramel (equal parts of runny cashew butter and maple syrup, mixed with a pinch of salt) and/or chia jam (200g frozen raspberries cooked with 2 tbsp of maple syrup, then mixed with 1 tbsp of chia seeds). Optionally add raw pecans and a drizzle of melted chocolate. Enjoy!
