Are you traveling this year? I would honestly prefer a staycation because traveling with all the corona restrictions seems not fun at all… But the fact is I haven’t seen my mom in a year and this is the only moment I can go and visit her… So yes, I’m getting ready for the holiday, trying to finish tons of food we still have in the fridge and in the freezer 😜
In the meantime I’m treating myself and the kids to healthy snacks and desserts, I love combining seasonal fruits, something crunchy (like granola or puffed grains) and chia pudding or banana ice cream.
Here I have blueberries, raspberries and grapes, puffed spelt and yogurt chia pudding 😊
Super yummy, also as a light summer breakfast!
I’ll leave you the chia pudding recipe below πŸ‘‡

Yogurt chia pudding (serves 2)
πŸ”Έ4 tbsp of chia seeds
πŸ”Έ1 cup (240ml) of light coconut milk
πŸ”Έ2 heaped tablespoons of thick coconut yogurt
πŸ”Έ1 tbsp of coconut or maple syrup
Mix all ingredients in a jar or bowl, place in the fridge for a minimum of 2 hours, or overnight.
