Happy Monday my dear friends! Hope you are all doing well ♥️
I’m coming to you with a new breakfast recipe that totally conquered my heart these days 😊
It’s a single serving baked oatmeal cake 🍰 You could say it’s just a twist on baked oatmeal, but I find it much cake-like both in texture and consistency.
Today I’m presenting you the most basic version, but I have more fancy variations coming in the nearest future 😄🍫🍒

Single serve baked oatmeal cake:
45g (a little less than 1/2 cup) of oats
2 tbsp (20g) oat flour
1/2 tsp baking powder
1 tbsp (8g) chia seeds
pinch of sea salt
1/2 tsp of cinnamon
1/2 cup (120ml) of almond or oat milk
1 tbsp maple syrup
1/2 tsp of vanilla extract
In a small mixing bowl, combine oats, oat flour, baking powder, chia seeds, salt and cinnamon. Add plant milk, maple syrup and vanilla, mix to combine. Leave for 5-10 minutes to soak while you preheat the oven to 180C. Transfer everything, including any excess liquid, to a single serving spring form or cake mold, the bottom should be lined with baking paper. Bake for 18-20 minutes or until golden brown. Leave to cool slightly before removing from the form. Can be served warm or cold, with coconut yoghurt, nut butter, fresh fruits and (optionally) maple syrup.
