The figs are back in season which brings all the autumn feelings 🍁
I’m not sure if I’m ready for the summer to end, but I’m sure I’m gonna make the most of the fig season!
It’s one of my favorite fruit, so I’m warning you there’s gonna be some serious fig spam here 😄💜
I prepared buckwheat banana pancakes this morning, they are naturally gluten free and the nutty buckwheat tastes just great with sweet figs!

Buckwheat banana pancakes
(makes 8 pancakes)
85g (3/4 cup) of buckwheat flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp of cinnamon
pinch of salt
1 large ripe banana
1/2 cup of almond milk
1 tbsp of apple cider vinegar
1 tbsp of oil (for example coconut, MCT, olive, grapeseed…)
1 tsp of vanilla extract
Combine flour, baking powder, baking soda, salt and cinnamon in a mixing bowl. Add banana, almond milk, apple cider vinegar, oil and vanilla to a blender. Blend until combined. Pour the mixture into the bowl with flour and mix only to combine, don’t overmix. Bake pancakes on a hot non-stick skillet until golden brown on both sides.
