Happy pancake weekend dear insta friends 😊🥞🎉
I decided to call it pancake weekend cause I made exactly the same pancake recipe two days in a row and I even had it with exactly the same toppings 😊 But it happens very often than when I really enjoy something I feel the need to eat it on repeat for a longer while, anyone relates?
The recipe I used is the easiest, one-bowl, oil-free, 4-ingredient, good old banana oat pancake recipe. It’s perfect for when you want to have your breakfast ready quick or when you don’t have many fancy ingredients on hand.
The pancakes turn out soft, lightly sweet and moist, they taste perfect with all kinds of toppings, but most of all with peanut butter and syrup 😉
This is how to do it:
.
Banana oat pancakes
🔸1 large ripe banana
🔸3/4 cup of oat milk
🔸1 cup of oat flour
🔸1/2 tsp of baking powder
In a bowl, mash the banana with a fork. Add all remaining ingredients and mix to combine. The consistency should be rather thick, but pourable. Feel free to add an extra splash of milk, it can be necessary if the banana you used was not big enough. Bake pancakes on a hot non-stick pan (I didn’t use any oil, but you can use it if you don’t have a good pan), flipping when small bubbles on surface appear. Serve warm with peanut butter and syrup! 🥞
