Happy Sunday dear people, the last one before Christmas! Finally time to slow down and relax. Despite all negative circumstances (lockdown…) I’m feeling such a relief that I’ll be able to enjoy time with my closest family 🤍🎄
This morning we had a late breakfast/brunch with toasts and chia pudding jars. When I add dragon fruit and pomegranate seeds to my jars I instantly feel it’s Christmas ❤🎄 White and red colors create such a lovely festive mood, don’t you think? And very delicious too 😋🤩
For those of you who want to know what’s exactly in my jars – from the bottom: vanilla chia pudding, puffed quinoa, pomegranate seeds, dragon fruit (pitaya), coconut cream, date syrup. Easy peasy but with that “wow” effect!

Vanilla chia pudding:
1 cup of almond milk
1/4 cup of chia seeds
1 tbsp of maple or agave syrup
1 tsp of vanilla bean paste or extract
2 tbsp of plain plantbased yoghurt
Add all ingredients to a bowl or jar and whisk well. Whisk a couple of times during the first 10 minutes (this way there no lumps will form), then place in the fridge for at least 1 hour.
