Happy Sunday from me and my stack of banana bread pancakes 🥞🍌🥰
Hope you are all doing well!
And in case you feel like trying this naturally sweet, soft and very comforting breakfast or brunch recipe, I’ll leave it for you here below.

Banana bread pancakes
1 medium, ripe banana
1/2 cup of oat or almond milk
2 tsp apple cider vinegar
1/2 tsp vanilla extract
(optional)1 tbsp of coconut sugar
1/2 cup of oat flour (sub spelt flour)
1/2 cup of almond flour
1/2 tsp baking powder
1/2 tsp baking soda
Cinnamon, to taste
In a mixing bowl, mash the banana with a fork. Add plant milk, vinegar, vanilla and (if using) coconut sugar. Mix to combine. Add all remaining (dry) ingredients and mix into smooth pancake batter. Cook pancakes in a non-stick skillet, over medium heat (don’t feel tempted to cook over high heat as the pancakes will burn on the outside before they’re cooked on the inside). Flip halfway through.
