Happy Wednesday 😊
Do you remember the caramel recipe from my last post? Well I told you it worked well with all kinds of treats and desserts, and now I’m presenting you a proof 😉 Pecan granola tartlets, filled with cinnamon maple apples and topped with peanut butter caramel 😋 It was so gooood, perfect for this time of the year 🍂 Would you have it for breakfast or as dessert?
.
Pecan granola tartlets
1/2 cup pecans
1/2 cup oats
1/2 cup almonds
1/4 tsp of sea salt
2 tbsp of coconut oil
2 tbsp of maple syrup
1-3 tbsp of water
Blitz pecan, oats and almonds in a food processor, until broken into very small pieces. Add salt, coconut oil and maple syrup and blend again until well combined. Keep the blender going while slowly adding water, tablespoon by tablespoon, until the dough comes together and you can form a ball easily. Press the dough into the bottom of 3 or 4 silicone tartlet molds (depending on the size). If using metal molds, line them with stripes of parchment paper so you can remove the crusts easily.
Bake at 180C for 12 minutes, or until golden brown. Let cool completely before removing from the molds.
Prepare the apple filling by cooking 2 chopped apples with 2 tablespoons of maple syrup and a teaspoon of cinnamon until soft.
Fill cooled crusts with cooked apples and drizzle with peanut caramel.
