Have you ever tried tapioca pudding? 🤔
It’s my latest obsession! You need small tapioca pearls to make it, I usually order them online but you can also buy them locally in Asian stores.
It’s easy to prepare and I just love that creaminess and chewy consistency 🥰
Today I paired it with mango purè, coconut cream and date syrup, I loved this combo! And I cannot even decide if I prefer to have it as breakfast or dessert 😅
Here’s how I make it:

Tapioca pudding (serves 2)
▪️1/3 cup of tapioca pearls
▪️1 and 1/3 cup plantbased milk of choice
▪️1 tbsp maple syrup, or liquid sweetener of choice, you can add more if you prefer sweeter taste
▪️1/2 tsp vanilla extract
First soak tapioca pearls for 1 or 2 hours in abundant amount of cold water. Drain and add to a saucepan along with all remaining ingredients. Bring to a simmer, stirring frequently. Cook over gentle heat for about 12-15 minutes, until pearls are translucent and the pudding has thickened. Transfer to glasses, serve warm or cold.
For the mango purè simply blend the flesh of one ripe, sweet mango.
