Hello Friday and hello fluffy banana yoghurt porridge 🍌
I’m still dealing with a bunch of overripe bananas, but I can’t complain, this banana porridge turned out absolutely dreamy 😇🍌
So if you have a sweet and soft banana to use I highly recommend you trying this recipe for breakfast, especially now, when the mornings are already getting chilly. It’s naturally sweet, comforting and contains an extra dose of probiotics and protein coming from yoghurt 😊

Banana yoghurt porridge
▪️Half of a large banana, mashed
▪️1/2 cup (about 55g) oats
▪️1 cup (240ml) of water
▪️pinch of sea salt
▪️1/2 tsp of natural vanilla extract
▪️1/2 tsp of cinnamon
▪️1/4 cup (60ml) of plant milk of choice
▪️2 heaped tbsp of Greek style (thick) coconut yoghurt
Add mashed banana, oats, water and salt to a sauce pan. Bring to a simmer, whisking frequently. Cook on low heat for about 5 minutes or until most of the liquid is absorbed, don’t forget to stir. Add milk, vanilla and cinnamon, cook for a few more minutes until thickened, stirring constantly. Remove from heat and mix in the coconut yoghurt. Transfer to a bowl, top with banana slices, peanut butter, chocolate chips and walnuts, or different toppings of choice. Enjoy!
