I was wondering – is it only me not being able to find regular flour anywhere? There’s no wheat and no spelt in the supermarkets, while (fortunately) I can still get almond flour and buckwheat flour pretty easily.
For that reason I was kinda forced to make buckwheat pancakes again 😅🥞 Not complaining though, they turned out fluffy and delicious 😉

Banana buckwheat pancakes
In a mixing bowl combine 3/4 cup (90g) of buckwheat flour, 1/2 tsp of baking powder, 1/2 tsp of baking soda and a pinch of salt. In a blender blend one ripe banana, 1/2 cup of plant milk, 1 tbsp of apple cider vinegar and 1 tbsp of oil (melted coconut, olive, etc.). Add blended mixture to the bowl with dry ingredients and mix to combine. Bake 6 pancakes on a hot, lightly greased non-stick skillet, flipping when bubbles appear.
