It’s Friday so I guess we all deserve a platter of goodness for breakfast (or lunch), am I right? 😁😊
I made easy banana oat pancakes again, you can find the recipe 4 posts back and this is half of what the recipe makes, cause sharing is caring 😉
I served them with lots of fresh fruits, peanut butter and raspberry chia jam, which I love and try to always have in the fridge. It’s great for pancakes, toasts, baking, everything!

Raspberry chia jam (makes approximately one cup)
🔸300g frozen raspberries
🔸3 tbsp pure maple syrup
🔸1 tbsp chia seeds
Add frozen raspberries and maple syrup to a saucepan. Heat over medium heat until berries release their juice, mash with a fork and bring to a simmer. Let cook for about 10 minutes. After that time remove from heat, mix in chia seeds and let cool to room temperature. Transfer to a jar and store in the fridge for up to 3 days.
