No time for baking during the weekdays? No problem! 😊 Let’s have carrot cake oats for breakfast, who’s in?
These carrot cake overnight oats thick all the boxes – they are rich, delicious, sweet, tangy, satisfying, easy to prepare, nutritious and healthy 😉 Aaand it really feels like having a big slice of carrot cake for breakfast! 🥕🎂

Carrot cake overnight oats
🔸️1/2 cup (50g) rolled oats
🔸️1 tbsp chia seeds
🔸️1/4 cup (25g) finely grated carrot
🔸️1 tbsp almond butter
🔸️1/2 tsp vanilla bean paste
🔸️1/2 tsp of cinnamon
🔸️pinch of ginger
🔸️Handful of raisins OR 1 large medjool date, chopped
🔸️Handful of walnuts, chopped
🔸️1/2 cup of plant milk
🔸️1/4 cup of orange juice
🔸️2 tbsp of coconut yoghurt
In the evening, mix all ingredients in a jar or bowl. Cover and let sit in the fridge overnight. In the morning transfer to a bowl (you can heat it on the stovetop or in microwave if you prefer warm oats), top with your favourite toppings and optionally add a drizxle of date or maple syrup. Enjoy!
