Peanut butter overnight oats 😋
I couldn’t resist making simple peanut butter overnight oats to pair it with leftover chia jelly (recipe for the jelly one post back 😉)
Would you eat this or do you prefer to stick to ‘Sunday is for pancakes’ option?
I’ll leave you this easy (only 5 ingredients!) recipe below. Just remember that what really does the trick are right toppings, I mean berry jelly, chia jam or at least mashed raspberries and extra peanut butter on top are highly recommended 😉🍓

Peanut butter overnight oats
(serves 2)
🔸100g (about 1 cup) of rolled oats
🔸1 tbsp of chia seeds
🔸1 (heaped) tbsp of peanut butter
🔸1 tbsp maple syrup OR 1 large medjool date, chopped
🔸300ml (1 and 1/4 cup) unsweetened plant milk
🔸(optional) pinch of salt, you can skip it if your peanut butter already has salt in it
Combine all ingredients in a bowl or jar. Let sit in the fridge overnight, in the morning mix it again with a spoon, transfer to serving cups or bowls, top with peanut butter and jelly, add something crunchy (like puffed grains or chopped nuts) and enjoy!
