Quick lunch idea – savory waffles – what do you think, yay or nay? 🍃🍅🥑
I made my waffles with wholemeal spelt flour and an extra boost of color and nutrients from @unicornsuperfoods Matcha 💚🍵
Served with vegan cream cheese, avocado, chickpeas, cherry tomatoes, herbs, nuts and seeds and a drizzle of hot sauce 🌶️

Savory spelt matcha waffles (makes 6 small/medium waffles)
🔸1 cup (120g) wholemeal spelt flour
🔸1/4 tsp Himalayan salt
🔸1 to 2 tsp matcha powder
🔸1 tsp baking powder
🔸1/2 tsp baking soda
🔸1 cup (240ml) unsweetened almond milk
🔸1 tbsp lemon juice
🔸1 tbsp olive oil (sub coconut or avocado oil) + more to grease the waffle iron
Preheat the waffle iron. In a bowl mix flour, salt, matcha powder, baking powder and baking soda. Add almond milk, lemon juice and olive oil and mix only until combined. Bake waffles in a hot waffle iron, greased with a, little bit of oil, for about 4-6 minutes (exact time will depend on your waffle iron). Best served warm!
