Refreshing lemon and raspberry curd, creamy coconut chia pudding, blueberries and puffed quinoa.
One of my favourite flavour combos, so yummy and energising, perfect as a healthy afternoon snack 🍋🫐

Recipe (makes 2 servings)
For the curd: Add 300ml of full fat coconut milk, 1/4 cup of agave syrup, juice of 1 large lemon, 1 tbsp of corn starch and 1/2 tsp of agar agar to a blender. Blend until smooth. Pour half of the mixture to a saucepan and bring to a simmer. Cook for 1 minute stirring continously, let cool slightly, pour into 2 dessert cups (I used a muffin pan to keep my cups inclined) and refrigerate for at least 30 minutes. Add 1/2 cup of fresh or frozen raspberries to the mixture remaining in the blender, blend until smooth. Again – transfer to saucepan and let simmer for 1 minute. When slightly cooled, transfer to the cups and return to fridge.
For the chia pudding: Mix 3 tbsp of chia seeds with 1 cup (240ml) of full fat coconut milk and 1 tbsp of agave syrup. Let sit in the fridge for at least an hour to thicken. When ready, use it to fill up the cups.
Top with fresh berries of choice and enjoy!
