Single serve apple almond oatmeal cake 🥧🍎 Such a perfect Sunday breakfast, especially on a wet and gloomy Sunday like today 🌧🍂
Similar to the basic oatmeal cake I posted a while ago, but this time I added chopped apples, a lot of cinnamon, almond flour and coconut sugar. I topped it with coconut yoghurt, caramelised apples and almond butter. So yummy!

Single serve apple almond oatmeal cake:
🔸️40g (a bit less than 1/2 cup) of rolled oats
🔸️2 tbsp of almond flour
🔸️1 tbsp of chia seeds
🔸️2 tsp of maple syrup
🔸️2 tsp of coconut sugar
🔸️1/2 of an apple, peeled, cored and chopped
🔸️1/2 tsp of cinnamon
🔸️1/2 tsp of baking powder
🔸️pinch of salt
🔸️1/2 cup (120ml) of almond milk
Add all ingredients to a mixing bowl and mix to combine. Set aside to soak for about 10 minutes while you preheat the oven to 180C. Pour the mixture (with all the excess liquid) to a single serve spring form with the bottom lined with baking paper. You can also use a ceramic or silicone mold. Bake at 180C for 18 minutes. Let cool for about 15 minutes before serving.
