Something light and easy in between all the festive dishes and desserts I’ve been testing these days for myself and for the clients π I’m going to share a festive tart recipe with you soon.
But for now let’s focus on this eamy coconut chia pudding, made with coconut milk and coconut yoghurt, topped with more yoghurt, cashew butter, lots of berries and a drizzle of date syrup.
Refreshing as a snack or a light breakfast. I’ll leave the recipe below ππ

Coconut chia pudding (serves 2-3)
πΈοΈ1 cup of creamy canned coconut milk (shake a can of coconut milk in room temperature before opening to have it perfectly creamy)
πΈοΈ 1/2 cup of plain coconut yoghurt
πΈοΈ1 tbsp of maple syrup (or more to taste)
πΈοΈ 5 tbsp of chia seeds
Add all ingredients to a bowl or to a large jar and whisk well. Set aside on the kitchen counter for 15 minutes and come back to give it a stir every 5 minutes in order to avoid lumps. Transfer to the fridge for the next 30-60 minutes (or longer). If you soak the pudding overnight you may need to mix in a splash of extra plant milk in the morning.
