Strawberry millet pudding with strawberry compote 🍓
Have you ever tried millet pudding? It’s delicious, creamy and super healthy!
Millet is a grain pretty popular here in Europe, but also still underrated in my opinion. It’s very nutritious, versatile and naturally gluten free 🍃 Before you cook it, remember to rinse it well with hot water, so that it loses its bitter aftertaste.
I love to have millet pudding for breakfast or dessert!

Strawberry millet pudding with strawberry compote (serves 2)
🔸Start by cooking 200g of fresh or frozen strawberries with 2 tbsp of maple syrup and 1 tbsp of lemon juice, until the strawberries release their juices. Let simmer for 5-10 minutes. Set aside and let cool.
🔸To a saucepan add 1/2 cup of rinsed (preferably in hot water) millet, 2 cups of plant milk of choice, 2 tbsp of maple syrup and 1 tsp of natural vanilla extract. Cook for about 12 minutes, until it starts to fall apart.
🔸Add half of the cooked strawberries (with all the strawberry juice) to the saucepan with cooked millet and blend with an immersion blender until completely smooth. Feel free to add more plant milk if you prefer thinner consistency.
🔸Transfer to serving cups or bowls. Serve warm or cold, topped with remaining strawberry compote and fresh strawberries.
