Do you like getting creative with your snacks and desserts?
I had to make a good use of one super ripe and juicy mango that was almost at the point of no return, so I chopped it and added to the bottom of the glasses. The rest was pure improvisation – I added layers of vanilla chia pudding (that I prepare at least a couple of times every week, cause it makes a great base or addition to our breakfasts and snacks!), puffed quinoa, banana slices and super sweet red grapes πŸ‡πŸŒ
I finished it off with chopped nuts, chocolate chips, some more quinoa puffs and date syrup. It was gone within minutes! πŸ˜…πŸ§πŸ§
I’m going to leave my basic vanilla chia pudding recipe here below in case you want to get creative too!

Vanilla chia pudding
πŸ”ΈοΈ4 tbsp chia seeds
πŸ”ΈοΈ1 cup (240ml) of plant milk, I like to use barista oat milk for extra creaminess
πŸ”ΈοΈ1 tbsp maple syrup
πŸ”ΈοΈ1 tsp vanilla bean paste
Mix all ingredients in a jar or bowl. It is important to mix several times during the first 5-10 minutes, to prevent any lumps from forming. After that time you place the pudding in the fridge for a minimum of 1 hour, or overnight. Enjoy as dessert, breakfast or snack!
