This may look like just a bowl of soup, but in fact it’s a complete, super delicious one-bowl meal 😋🥣
It contains veggies, protein and carbs, it’s really satisfying, easy to make and even the kids love it!

Butternut squash and red lentil cream soup
🔸1 tbsp coconut or olive oil
🔸1 onion, diced
🔸1 large garlic clove, minced
🔸1cm long piece of fresh ginger, peeled and minced
🔸1 butternut squash, peeled, seeded and cut in cubes
🔸1/2 cup split red lentils, dry
🔸2 cups hot water
🔸3/4 to 1 tsp sea salt
🔸1/2 tsp curry powder
🔸1/2 cup light unsweetened coconut milk
In a large pan, heat 1 tbsp of oil. Add onion, garlic and ginger and sauté for 3 minutes, stirring frequently. Add cubed squash, mix well and sauté for 5 minutes. Add red lentils, water, salt and curry powder. It’s ok if some squash chunks are above the water level. Bring to a boil, cover with a lid and let cook over gentle heat for 25 minutes. After that time add coconut milk and blend until smooth and creamy. Taste and adjust salt if needed. Serve with cooked basmati rice, crunchy seeds of choice, fresh herbs, chili flakes and (optionally) a drizzle of hot sauce 🌶️
